Paneer Wrap

Ingredients

Tomato - 2
Capsicum - 1
Cabbage - 6 leaves
Paneer - 1 pack
Jeera - a little
Red chilli powder - 1/2 tsp
Chaat masala - 1/4 tsp
Turmeric powder - 1/4 tsp
Jeera powder - 1/2 tsp
Corriander powder - 1/2 tsp
Gram masala - 1/2 tsp
Kasuri methi - a little
Corriander leaves - a little
Mayonnaise - 2 tbsp
Salt to taste
Chapathis - 6
Oil - 1 tbsp

Method

Cut the cabbage, capsicum and paneer into juliennes.
Deseed the tomatoes and as cut them into juliennes.
Heat oil in a pan. When the oil is hot add the jeera.
Next add the cabbage and suate for a while.
Then add the capsicum and saute.
Add all the powders, Chat masala and kasuri methi.
Mix well. Add salt to taste.
Saute well little the raw smell of the powders are gone.
Next add the paneer and tomato.
Mix well.
Turn of the heat and add corriander leaves.
Then apply mayonnaise on one side of the cooked chapati.
Next add the paneer filling.
Roll it tight in butter paper or aluminum foil and serve hot.

Cabbage Cauliflower Masala

This is one of my favorite recipe and extremely easy to make, equally delicious and presentable.Couple of days back there was an unexpected guest so I quickly planned a recipe and it turned out good.

Ingredients
Cabbage - 500gms ( finely chopped
Cauliflower - 5 - 6 big florets( make into tiny pieces)
Carrot - 1 grated
Coriander powder - 1 tsp
Cumin Powder - 1/2 tsp
Chilli powder - 1/2 tsp
Turmeric - 1/4 tsp
Garam masala powder - 1/4 tsp
Madras Curry powder - 1/2 tsp
Amchur powder - a pinch ( optional)
Pepper powder - a pinch ( optional )
Fennel seeds - 1/4 tsp
Cumin seeds - 1/4 tsp
Asafoetida - 2 pinch
Cashews - 10 ( garnishing - optional )
Cilantro - 2tbs( finely chopped )
salt - as per taste

Method
Heat a pan ,add oil followed by cumin seeds, fennel seeds, asafoetida, cabbage,salt, all powdered ingredients,carrot , fry them for 8 minutes then add finely chopped cauliflower. Mix it well add little water (may be 1tbsp) and cilantro. Now reduce the flame to medium and stir it occasionally. Optionally fried cashews can be added along with fresh cilantro leaves. This can be served as a side dish for Roti or for Rice and also can be used a puff stuffing.

Note : I used MDH madras curry powder. The Prefect consistency for the masala is when the oil separates. Alternate with peas, corn, beans as per your choice.
