Batura

Batura is a popular North Indian fast food dish. Batura is a fried puffy bread made out of all purpose flour and served with Channa masala/ chickpeas curry. My husband likes chole batura with chick pea gravy for its delicious tangy taste. It takes a little bit of time but it taste real good.


Ingredients:
All Purpose Flour -2 cups
Potato - Boiled and smashed 1
Yogurt - 2tbs
yeast - 2 tsp (mix in 1/4 cup of like warm water with sugar.Leave it for 15 mins)
Sooji/Rava/Semolina- 1/4 cup
Bread - 2 slices ( crust removed )
Sugar - 1/4 tsp
Salt
Water - To knead a smooth dough





Method:
In a bowl sift the flour , Sooji , salt ,break the bread and add it in the bowl. Add smashed potato,yogurt, yeast mixture. Knead smooth dough by adding little by little water. Keep it in a warm place and allow it to ferment for 2- 3 hrs. Make a small size ball out of it and roll it out just like a Roti. Fry the flattened dough in a hot oil. Serve hot with delicious chole. Note : The dough should be soft and pliable.Once the oil is hot enough, slide the batura into the oil and press it lightly with the ladle until it puffs up ( may be 30 secs , then flip over gently). Add a little salt to the hot oil to keep it from smoking.
